01 · Overview
Produced by the Ramos Garcia family in Peru's La Libertad region, this Yellow Honey processed Typica is a beautifully sweet and expressive coffee. Grown at over 2,100 metres above sea level, it combines the richness of dried fruit and dark chocolate with the clarity and elegance that careful honey processing can achieve.
Produced in small batches and refined over several harvests, this is a coffee that showcases both craftsmanship and innovation.
02 · Origin
High in the Peruvian Andes, cool temperatures and dry mountain air allow coffee cherries to mature slowly, producing exceptional sweetness and complexity.
The Ramos Garcia family work alongside Proyecto Otuzco, an initiative supporting small producers through technical training, quality improvements and sustainable farming practices.
03 · About the Producers
Emiliano Ramos Gallardo and Mirian Garcia Cavero originally relied on growing fruit crops, but unpredictable harvests made it increasingly difficult to support their family. Their introduction to specialty coffee in 2017 transformed both their farm and their future.
Working closely with Proyecto Otuzco, the family has continually refined their coffee production, with honey processing becoming a particular speciality. Their coffees are now recognised for their balance, clarity and consistency while remaining firmly rooted in traditional family farming.
Every harvest is selectively hand-picked and processed with remarkable care, producing coffees that truly reflect the unique conditions of northern Peru.
04 · Processing
Only perfectly ripe cherries are harvested before undergoing an initial open fermentation lasting around 12–18 hours.
The cherries are then depulped while leaving a controlled amount of sticky fruit mucilage attached to the parchment. The coffee is transferred into sealed bags for a further 72-hour low-oxygen dry fermentation, allowing sweetness and complexity to develop while preserving clarity.
Finally, the coffee is slowly dried on raised beds for 20–22 days until it reaches approximately 11% moisture before resting and milling. This careful process creates the distinctive sweetness and silky mouthfeel that Yellow Honey coffees are known for.

Expect rich dark chocolate sweetness from the first sip, balanced by notes of dried fruits that bring depth without becoming overpowering. The body is smooth and rounded, with a syrupy sweetness that's characteristic of honey processing.
Despite its richness, the cup remains remarkably clean and refined, finishing with excellent balance and lingering sweetness.

07 · From the Roaster
This is one of the coffees I'm most excited to roast because it sits somewhere between a classic washed coffee and a natural. The Yellow Honey process gives it wonderful sweetness and body while still keeping the cup clean and balanced.
I roast this to highlight its chocolate richness and dried fruit character without losing the elegance that makes it so enjoyable. If you're looking to explore something a little different from a traditional washed coffee, this is an excellent place to start.
